Food Centre Wales can deliver in-house bespoke courses to meet HACCP directives to the meat, dairy and catering sectors. Basic meat and dairy skills can be studied and practically applied in our meat and dairy processing areas.

Overview 

Training providers have identified a growing need to make learning more relevant to specific business environments to increase effectiveness. These new qualifications are required to address new National Occupational Standards reflecting sector-specific needs. In line with this demand, the CIEH Level 2 Awards in Food Safety have been designed to address the food safety needs of the catering, manufacturing and retail sectors.

 

New levels

In response to the requirements of the Sector Skills Councils and the Qualifications and Curriculum Authority (QCA), the CIEH are launching new sector-specific Level 2 awards in food safety, which will replace the CIEH Foundation Certificate in Food Hygiene. Outline programme

The qualifications cover the following topics: Legislation Food safety hazards Temperature control Refrigeration, chilling and cold holding Cooking, hot holding and reheating Food handling Principles of safe food storage Cleaning Food premises and equipment
Qualification information - Designed for anyone working in a catering, manufacturing or retail setting where food is prepared, cooked and handled.


Suggested progression on completion: CIEH Level 3 Award in Supervising Food Safety in Catering CIEH Level 3 Award in Food Safety Supervision for Manufacturing CIEH Level 3 Award in Food Safety Supervision for Retail

A half-day course aimed at all candidates who have already taken the Level 2 Award in Food Safety in Catering/Manufacturing course, in order that food handlers keep their knowledge up to date with current food legislation. Advised that candidates attend this course every three years.

A 3-day course aimed at food handling supervisors within the food and catering / manufacturing industries.

Level 3 Awards in Food Safety 

For those working in all food businesses at a supervisory level

  • Level 3 Award in Food Safety Supervision for Retail

Outline of the Programme:

A 1-day course aimed at all candidates who have already taken the CIEH Level 3 Award in Supervising Food Safety in Catering / Manufacturing course, in order that food business supervisors or managers keep their knowledge up to date with current food legislation.

Advised that candidates attend this course three years after completing the initial 3-Day qualification.

HACCP courses are designed specifically for client use and can range from basic HACCP Awareness training to full 12 point HACCP plan generation. 

Consequently, the charges for these courses may vary and are based upon discussion with Food Centre Wales and the client.

This 1-day qualification is designed for those working or preparing to work in food businesses where a food safety management system based on HACCP principles is implemented.

The CIEH Level 2 Award in Principles of HACCP is designed for those working or preparing to work in food businesses where a food safety management system based on Codex HACCP principles is implemented. It will help anyone in a catering or manufacturing setting to understand the principles and purpose of HACCP and be able to apply it correctly in their own workplace. This one-day qualification is particularly useful for those involved in the implementation and maintenance of HACCP-based systems, as well as those who are, or intend to become, members of HACCP teams. It meets the requirement for training on the application of HACCP principles under Regulation (EC) NO. 852/2004 on the hygiene of foodstuffs.

Outline programme

Successful completion of the training programme and assessment will enable candidates to develop a knowledge and understanding of:

  • the purpose of a HACCP system
  • the features and terminology of HACCP
  • how a HACCP system is applied in the workplace.

Level 2 Award in Healthier Food & Special Diets
(formerly Level 2 Award in Nutrition)
The benefits of a healthy and varied diet are indisputable. The government is committed to reducing ill health and death caused by diet-related disease and consumers are increasingly aware of the effects of a poor diet. More than ever, caterers need to understand the link between diet and health. People working with food have a responsibility to keep up to date with current recommendations and guidelines. This qualification provides caterers with the fundamental principles of nutrition and the necessary knowledge to effect real change in the eating habits of the nation.

Equivalent to the 'foundation' level
Who needs this qualification?

  • Employees in catering preparing and serving food
  • Those involved in the selection of menus, recipes and ingredients
  • Customer facing employees who need to understand customer queries or ascertain needs of individuals
  • Catering establishments e.g. health care, education

  • The relationship between nutrition, diet and health

  • Current policy, legislation and voluntary guidelines

  • that different groups of people require different diets to suit their lifestyle
  • the guidance that is available and describe, in general terms, the requirements of the current legislation

  • the importance of accurate nutritional information being available on food products
